In June and July, when native English strawberries are at their best, no traditional event would be complete without them. A dish of strawberries and cream is as essential a part of watching tennis at Wimbledon, rowing at Henley or racing at Ascot as a hot dog is at a World Series baseball game.

Eton Mess, a sweet variation on ordinary strawberries and cream, is traditionally enjoyed at the June 4 awards day picnic by parents and students of 567 year old Eton College, England's oldest prep school.

It's easy to make and it's called Eton Mess because it looks like...well, a mess actually. Get in the spirit of English summertime with this traditional strawberries and cream dessert.

Eton Mess Ingredients

Serves 4
  • 20 fluid oz whipping cream or extra heavy cream
  • 1 pound fresh strawberries
  • 8 to 10 large meringue kisses or meringue tartlet shells
  • two tsp. sugar
  • A dash of port or madeira (optional)
Assemble all the ingredients. If you are just learning to make meringues, Eton Mess is a great way to get rid of your failures - as you will see. But you can just as easily buy ready made meringues.
